About us...   Alessio Giottoli and Thor Born in florence, comes from a long line of umbrians. Local folk musician. Loves horses, farming etc. And is also the architect of Monestevole. Once a week (depending on weather) he also rolls up his sleeves and makes homemade pizza in the outdoor pizza oven. Award winning olive oil. Cotto Etrusco. Thor is one of the three horses on Monestevole. Thor is a stallion thoroughbred. Climbs the mountains faster than any car.   Valeria Giottoli Born in Umbertide, Umbria, Valerias whole family lives within 20 kilometers. And one of the finer restaurants in town is run by her parents. Growing up in the kitchens of italy has been one of her passions throughout life, and she is a well known local chef.     Seth Schoming Seth is at the heart of all the musical workshops. He provides assistance to the lead workshop leaders. American born, he provides an English speaking base for many of the clients. He is a guitarist at heart, but he also loves classics, just finishing his thesis on the French Horn!   Alessio and Thor Thor takes Alessio out for a little jog.
